Hervé Restaurant opened in April 1996 and is considered one of the top restaurants in the Virgin Islands. The cuisine is a mix of contemporary American and classic French with Caribbean influences.

Hervé Paul Chassin, the proprietor, has over 35 years experience in the food and beverage industry in St. Thomas. He began his career in fine restaurants in France, London and Washington D.C. Now, he has created his own restaurant to express his culinary philosophy: delicious, high-quality food, with great service, reasonable prices with a spectacular atmosphere.

Hervé’s partner and wife, Paulette Keffas-Chassin, was a native of New York City. Her previous experience in restaurants consists of twenty years of dining in some of the best restaurants in the U.S. & France!

 

Located in the historic district of downtown Charlotte Amalie in St. Thomas, Hervé Restaurant is just steps from Main Street’s famous duty-free shopping center. Recommended by most cruise ship lines, Hervé offers a casual menu for lunch: quiche, crepes, spectacular salads, conch fritters and various sea foods, sandwiches and hot

In the evening, the twinkling lights of Denmark Hill surround the restaurant; the candles are lit and the ambiance is relaxed and romantic! The extensive dinner menu offers over thirteen seafood and fresh fish dishes along with twelve meat and poultry entrées, like filet mignon, venison, duck - even quail. Favorite specials are Bouillabaisse in a Pernod, saffron broth or classic surf ‘n’ turf.
 

The award-winning wine list consists of California and French varieties at every price range, including 25 wines by the glass. Of course, a full service bar satisfying every martini drinker or frozen mango sipper is available.
